Tilápia Fillet with Herb Butter

Tilapia Whole Fillet

Ingredients for the Tilápia
  • 3 tablespoons of butter at room temperature
  • leaves of 5 springs of thyme, washed and chopped
  • leaves of 3 bunches of basil, washed and chopped
  • salt and pepper freshly ground
  • 1 packages of Whole Tilápia Fillet Nativ (420 g each)
  • 2 tablespoons of olive oil
Ingredients for the bruschetta
  • 1 peeled and seeded tomato cut in cubes
  • salt
  • 2 slices of Italian bread
  • 1 garlic clove cut in half
  • 1 tablespoon of olive oil
  • 2 slices of crushed gorgonzola cheese (15 g)
Preparation

    Mix the butter, herbs, and salt, and roll them up by using a plastic film with approx. 3 cm in diameter. Take the roll to the freezer until is firm (20 minutes). Fillets: unfreeze the fillets by placing them in the lower portion of the refrigerator for about one hour. Season them with salt and black pepper to taste. Bruschetta: season the tomato with salt, and let it drain in a sieve for 15 minutes. In the mean time, rub the garlic onto the slices of bread and pour the olive oil gently Spread the gorgonzola cheese, arrange the drained tomato cubicles, and take them to a preheated (200°C) oven for 5 minutes.Complete: heat a large, thick bottom frying pan, butter with olive oil and, when hot, place the fillets. As soon as they are browned on one side, flip them over to brown the other side. Over the fillets, while still very hot, place one slice of butter to melt.
